my beloved pancake recipe.

breakfast is by far my favorite meal – probably because i have a sweet tooth and it’s the one meal of the day where you can eat something sweet without calling it desert!   i especially love breakfast on the weekends.  i have very fond memories of dad making pancakes for us after church…or going to breakfast with my poppa (that would be grandpa) on the weekends…or to coffee with my mom and grandma.  so even now, i just love breakfast and look forward to rolling out of bed on sunday and making breakfast while i drink my coffee – a morning necessity!  going through this process, obviously a lot has changed with what i can and can’t eat, but i have my trusty protein pancakes that are honestly so yummy that i feel like i’m ‘cheating’ because they’re so good.  plus i’ve figured out a way to make a healthy little sugar syrup that packs in a serving of fruit too.  fyi – i’ve tried every sugar free syrup out there and the best one by far is by smuckers!  so here’s my beloved protein pancake recipe:

angela’s protein pancakes
1/2 cup nonfat cottage cheese
6 egg whites
1 whole egg
1/2 cup whole oats (not instant)
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 cup sugar-free syrup (smuckers!)
1/2 cup strawberries or blueberries (or both)

mix the cottage cheese, egg whites, eggs, oats, cinnamon and vanilla in the blender until smooth.  spray a small and a large nonstick skillet (or griddle) with pam and bring to medium-high heat.  pour pancake mixture into the pans – making one large and one small makes them faster and keeps the shape…the mix is a bit runnier than regular pancakes.  wait for bubbles to come through and the edges to brown, then turn over and cook other side.  while pancakes are cooking, add berries to a small bowl and add the 1/4 cup syrup…zap in the microwave for 20 seconds, stir and heat another 20.  once pancakes are golden brown, spritz with about 10 sprays of ‘i can’t believe it’s not butter’ spray and top with the warm berry syrup!

enjoy with your morning cup o’ joe while reading your morning paper!  speaking of coffee – i love coffee.  anyone that knows me knows i love my coffee…love starbucks…just love love love it.  so the wonderful thing about coffee: zero calories.  my problem: i love cream in my coffee (half-and-half).  this is the one thing that i won’t give up during this whole process, but i just have to drink coffee in moderation – or black.  i’ll basically have 2 tablespoons of cream per day which is really only 40 calories…but in a normal cup of coffee i could easily use twice that, so i’m learning to drink it a bit more black or just drink less coffee.  trust me – i researched options and i just don’t like the alternatives.  tried the fat free half-and-half…gross.  i’d rather consume 40 calories of yumminess than 25 calories of yuk.  i read on some blog that soy creamer is good but i didn’t like it at all.  some people use milk in their coffee – it just doesn’t do it for me.  powder creamers…no.  and then all those fancy flavored creamers are just too sweet for me – and even the fat free ones are about 25-30 calories per 2 tablespoons.  the ONLY product i’ve yet to try that i really want to is this cream called MimicCremeand supposedly it tastes just as good as cream…but i couldn’t find it in any store and i’m not in the mood to pay $10 to ship me a $2 container of cream.  so for the time being – it’s just me and my half-and-half…all 2 tablespoons of it!
